Strawberry Pinwheels: A Delightfully Sweet Recipe

Strawberry Pinwheels – Add a fruity twist to your favorite treats! These stunning cookies are easier to bake than you might think: make one dough, then color half of it with freeze-dried strawberry powder. Stack the two colors, roll them into a log, slice, and bake.

This recipe yields: 35 – 40 servings Total cooking time: 1 hour and 5 minutes

Ingredients:

  • 2 ¾ cups of all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup unsalted butter at room temperature
  • ¾ cup sugar
  • 1 large egg
  • 1 ½ teaspoons vanilla extract
  • ½ oz freeze-dried strawberries, finely ground and sifted to yield 3 tablespoons of powder
  • ¼ teaspoon red gel food coloring

How to Make Strawberry Pinwheels:



  1. Step 1: In a large bowl, mix the flour with baking powder and salt. Set aside.

  2. Step 2: Using a mixer on medium speed, beat the butter and sugar until light and fluffy, about 3 minutes. Beat in the egg, followed by the vanilla. Lower the speed to low and gradually add the flour mixture, mixing until everything is combined.

  3. Step 3: Transfer one-third of the dough onto a sheet of parchment paper. Add the strawberry powder and red food coloring to the remaining dough and carefully blend until the color is even. Now roll each piece of dough into a rectangular shape. Between two sheets of parchment paper, roll out the plain dough into a 10 x 12-inch rectangle. Repeat with the strawberry dough.

  4. Step 4: Place the plain dough on top of the strawberry dough (aligning the edges evenly). Put the dough stack onto a baking sheet and chill in the refrigerator for 20 minutes. Afterward, remove the top layer of parchment paper from both doughs.

  5. Step 5: Tightly roll the stacked dough into a log, using the bottom parchment paper to help lift and roll the dough (if the dough is stiff, let it warm slightly).

Wrap the log in plastic wrap and freeze it until firm enough to slice, about 1 to 2 hours. (The dough can be frozen for up to 3 months. Let it thaw slightly at room temperature before slicing.)

  1. Step 6: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper and arrange the sliced dough rounds on the sheet. Bake for 15 to 18 minutes, rotating the sheet halfway through, until the tops of the cookies look dry. Let them cool on the baking sheet for 5 minutes, then serve and enjoy!
