Strawberry tart is a delightful dessert that can be served on special occasions, especially on Valentine's Day. This dish is known for its wonderful taste and vibrant color, and it contains strawberries, which play a significant role in enhancing mood with their red hue and high vitamin C content that helps produce happiness hormones.

This recipe is easy to prepare and requires only 20 minutes, making it sufficient to serve approximately 10 people.

For the Crust:

  • 3 cups all-purpose flour
  • A pinch of salt
  • ¼ teaspoon ground cinnamon
  • 1 cup melted butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon liquid vanilla (preferably, but powdered vanilla can be used if necessary)

For the Filling:

  • 3 cups liquid milk
  • ½ cup cornstarch
  • ½ cup powdered sugar
  • 2 large egg yolks
  • 2 large eggs
  • 1 teaspoon liquid vanilla
  • 1 teaspoon finely grated lemon zest

For the Topping:

  • A full basket of strawberries (approximately 20 or more, as needed)
  • ¼ cup apricot jam, mashed

Preparation Method for Strawberry Tart:

  1. Prepare the Crust: In a mixing bowl, combine melted butter and powdered sugar, and mix on medium speed for about 5 minutes until you have a light yellow mixture. In another large bowl, sift together flour, salt, and cinnamon. Gradually add this mixture to the mixing bowl and continue mixing on medium speed for about 2 minutes. Add the eggs and vanilla, mixing until you achieve a soft, homogeneous dough.

  2. Chill the Dough: Shape the dough into a ball, wrap it in parchment paper, and refrigerate for 60 minutes. Once chilled, roll out the dough between two sheets of parchment paper on a dry surface using a rolling pin.

  3. Shape the Tart: Place the rolled dough into a tart pan evenly across all sides. Use a thin wooden stick to poke several holes in the dough. Cover the surface with parchment paper and place dried beans or peas on top (this step is essential to prevent the dough from puffing up during baking).

  4. Bake the Crust: Preheat the oven to 180°C (350°F) and place the tart pan on the middle rack. Bake for about 8–10 minutes, then remove from the oven and let it cool completely.

  5. Prepare the Filling: In a medium saucepan, heat 2½ cups of milk over medium heat until boiling. Meanwhile, in a wide bowl, mix ½ cup of cold milk with cornstarch, powdered sugar, egg yolks, eggs, vanilla, and lemon zest. Whisk until smooth. Pour this mixture into the boiling milk, stirring constantly until it thickens into a creamy consistency. Cover with plastic wrap and refrigerate until completely cooled.

  6. Assemble the Tart: Pour the cooled filling over the baked tart crust. Arrange the strawberries aesthetically on top of the filling.

  7. Finish with Jam: Brush the mashed apricot jam over the strawberries with a wide brush to give them a beautiful shine and a delicious taste. Refrigerate until completely cooled before serving.
