Stuffed pumpkin is one of the popular main dishes in Arab cuisine, especially in the Levant, and is loved by many. It is quite similar to stuffed zucchini. This dish has numerous health benefits as it helps strengthen the immune system due to its richness in vitamins and dietary fibers.

Ingredients for Stuffed Pumpkin

  • 1 kilogram of pumpkin
  • 3 medium-sized tomatoes
  • 3 pieces of green bell pepper
  • Juice of 2 lemons
  • 4 cloves of garlic, mashed
  • 2 tablespoons of dried mint
  • 3 cups of water
  • Salt, to taste

For the stuffing:


Stuffed Pumpkin


  • 1 ½ cups of rice
  • 250 grams of ground beef or lamb
  • 2 tablespoons of tomato sauce and pepper paste
  • 1 tablespoon of salt
  • ½ teaspoon of sweet spices and black pepper
  • ¼ teaspoon of cinnamon
  • 1 onion, finely chopped
  • 1 medium-sized tomato, finely chopped

How to Prepare Stuffed Pumpkin

  1. Slightly peel the pumpkins and cut off the bottom in preparation for hollowing.

  2. Place the pumpkins in a bowl of cold water, then peel them lightly to make them smooth.

  3. Use a corer to hollow out the pumpkins, preparing them for stuffing with the rice mixture.

  4. Mix the stuffing ingredients well together, and fill the pumpkins with the mixture. Once stuffed, arrange the pumpkins alongside the stuffed bell peppers and tomatoes in a large pot.

  5. Add the lemon juice, water, dried mint, and mashed garlic to the pot.

  6. Sprinkle salt once the dish starts to boil in the pot.

  7. Cover the pot and cook over medium heat until the pumpkins are fully cooked.

  8. Remove the bell peppers and tomatoes earlier since they tend to cook faster than the pumpkins, then continue cooking the pumpkins until tender.

  9. Pour the sauce into a separate bowl and arrange the pumpkins, bell peppers, and tomatoes neatly on a serving plate.

The dish is now ready to be served and can be enjoyed with a side of salad or green onions!
