  • ½ teaspoon chicken spice mix
  • 1 teaspoon salt
  • 3 tablespoons ghee
  • ¼ teaspoon black pepper
  • 2 cups water

For the stuffing:

  • ½ cup butter
  • 1 cup water
  • 2 cups freekeh (green wheat)
  • ½ teaspoon each of black pepper and mixed spices
  • 1 teaspoon salt (adjust to taste)
  • ½ cup pine nuts
  • 1 finely chopped onion
  • ½ teaspoon ground cardamom

Preparation Method:

Stuffed Quail with Freekeh


  1. Prepare the Quails:

    • Clean the quails thoroughly, pat them dry, and rub them with salt and spices.
  2. Prepare the Stuffing:

    • In a pot over medium heat, melt the ghee and roast the pine nuts until golden brown. Remove the pine nuts and set them aside.
    • In the same pot, sauté the chopped onion until soft and translucent.
    • Add salt, spices, and water to the pot and bring it to a boil.
    • Meanwhile, wash the freekeh thoroughly and add it to the pot. Stir the ingredients well, then cover the pot and cook on low heat for 30 minutes until the freekeh is tender.
    • Once the freekeh is cooked, add the roasted pine nuts and mix well. The stuffing is now ready.
