Stuffed Rib Crown

  • 1 piece of beef rib
  • 1 medium carrot, diced
  • 1 cup of peas
  • 2 cups of water and short-grain rice
  • 2 teaspoons of ground ginger
  • 2 cloves of minced garlic
  • 1 medium onion, finely chopped
  • 4 tablespoons of corn oil
  • ½ teaspoon of crushed chili flakes
  • 1 teaspoon each of: cinnamon, paprika, ground cardamom, ground coriander
  • 2 teaspoons of salt and spices
  • ¼ teaspoon of black pepper

How to Prepare Stuffed Rib Crown

  1. Wash the rice thoroughly, place it in a deep bowl, pour water over it, add salt, and set it aside.

  2. In a small bowl, mix the spices, salt, coriander, chili flakes, black pepper, paprika, cardamom, and cinnamon together.

  3. Rub a small amount of the spice mixture onto the beef rib, then place the rib in the refrigerator while preparing the stuffing.

  4. In a heavy pot, heat the oil over medium heat, then add the garlic, ginger, and onion. Sauté together until fragrant.

  5. Add the rice to the pot and stir it well with the oil mixture.

  6. Pour in the water and add the remaining spices. Allow the mixture to boil for about 5 minutes.

  7. Reduce the heat and let the rice cook for approximately 10 minutes, ensuring it remains slightly undercooked.

  8. Add the diced carrots and peas, stirring them into the rice mixture.

  9. Preheat the oven to 180°C (350°F) and set the oven rack to the lower position.

  10. Shape the rib into a crown by folding the ends together, and place it in a high-edged round baking dish.

  11. Fill the center of the rib crown with the rice mixture, then cover it with aluminum foil.

  12. Place the dish in the oven and bake for 60 to 80 minutes until both the rice and meat are fully cooked.
