Stuffing Ingredients:

  • 1 cup of coarse bulgur
  • 200 grams of minced meat

  • ½ tablespoon of ground cinnamon
  • 1 teaspoon of mixed spices
  • 1 teaspoon of ground cumin
  • ¼ cup of sunflower oil

Yogurt Sauce Ingredients:

  • 5 cups of yogurt
  • 1 tablespoon of cornstarch
  • 1 teaspoon of salt
  • 4 garlic cloves, minced
  • 1 teaspoon of dried mint
  • 2 tablespoons of ghee (can be vegetable or animal-based)

Preparation Method:

  1. Prepare the Stuffing: Wash the bulgur thoroughly and soak it in water for 15 minutes. In a large bowl, combine the soaked bulgur, minced meat, chopped onion, salt, black pepper, cinnamon, mixed spices, and cumin. Mix well using a wide plastic spoon until all the ingredients are well combined.

  2. Prepare the Zucchini: Wash the zucchini, trim the tops, and hollow them out. Soak the hollowed zucchinis in salty water for about 25 minutes, then drain them in a colander. Stuff each zucchini with the prepared stuffing mixture.

  3. Prepare the Yogurt Sauce: In a large, deep pot, combine the yogurt, cornstarch, and salt. Place over medium heat and continuously stir using a hand whisk until the yogurt begins to boil. Once boiling, add the stuffed zucchinis to the yogurt sauce and cook on medium heat for 30 minutes until the zucchinis are fully cooked.

  4. Prepare the Garlic and Mint Mixture: In a small frying pan, melt the ghee over medium heat. Add the minced garlic and sauté with a wooden spoon until light golden. Add the dried mint and stir briefly.

  5. Finish the Dish: Add the sautéed garlic and mint to the yogurt and zucchini mixture. Gently stir for a few minutes until the garlic is well blended with the yogurt. Serve immediately while hot.
