  • 20 medium-sized zucchinis

Stuffing Ingredients:

  • 2 cups of Egyptian rice
  • 300 grams of minced meat
  • ½ cup of sunflower oil
  • 1 tablespoon of salt
  • 1 tablespoon of ground cumin
  • 1 teaspoon of ground black pepper
  • 1 tablespoon of mixed spices
  • 1 large onion, finely chopped

Broth Ingredients:

  • 6 large tomatoes, peeled
  • 4 tablespoons of tomato paste
  • 3 cups of lukewarm water
  • 8 garlic cloves, minced
  • 1 tablespoon of dried mint

Preparation Method:

  1. Prepare the Rice: Place the rice in a medium-sized bowl, wash it several times, and then soak it in warm water for 15 minutes.

  2. Prepare the Stuffing: In a large bowl, combine the soaked rice, minced meat, sunflower oil, salt, ground cumin, mixed spices, black pepper, and finely chopped onion. Stir all the ingredients together with a wide plastic spoon until fully mixed.

  3. Prepare the Zucchini: Trim the tops of the zucchinis using a sharp knife, then hollow out the insides. Place the hollowed zucchinis in a bowl of salty water and let them soak for about 10 minutes. Drain the zucchinis in a colander to remove any excess water, then stuff them with the prepared stuffing using your fingertips.

  4. Prepare the Tomato Sauce: In a blender, add the peeled tomatoes, tomato paste, and half a cup of lukewarm water. Blend on medium speed for a few minutes until smooth.

  5. Cook the Zucchini: In a large pot, pour the remaining water and add the tomato sauce mixture. Heat over medium heat until it begins to boil. Add the stuffed zucchinis and let them cook in the boiling sauce for a few minutes, then reduce the heat to low and simmer for 20 minutes until the zucchinis are fully cooked.

  6. Prepare the Garlic and Mint: In a small frying pan, melt a tablespoon of ghee over medium heat. Add the minced garlic and sauté, stirring continuously, until it turns light golden and fragrant. Add the garlic and dried mint to the stuffed zucchini pot, stir well, and let it cook for an additional 2 minutes before turning off the heat.

  7. Serve: Pour the stuffed zucchini with tomato sauce into a serving dish and serve hot.
