First Method:
  • 2 kilograms of lamb leg meat.
  • 1 cup of pasta.
  • 1 onion, quartered.
  • Cinnamon, pepper, cardamom.
  • Plenty of oil.
  • Salt to taste.

For the sauce:

  • 1 cup of yogurt.
  • 1 tablespoon of tomato paste.
  • Chopped garlic.
  • A pinch of pepper, salt, cinnamon, and coriander.

Second Method:

  • Lamb ribs.
  • 3 medium-sized potatoes, chopped.
  • 3 onions, quartered.
  • 3 cloves of minced garlic.
  • ½ cup of soy sauce.
  • 1 tablespoon of mixed spices.
  • 1 teaspoon of sweet paprika and ground rosemary.
  • 2 tablespoons of clarified butter (ghee).
  • 1 teaspoon each of salt and ground black pepper.

Preparation Method for Sudanese Rib:

First Method:

  1. Prepare the meat:

    • Wash the lamb leg thoroughly and place it in a large pot.
    • Add a little oil, then toss in the onion and spices. Stir them with the meat for about 5 minutes.
    • Pour enough water to cover the meat and cook over low heat until the meat is fully cooked.
  2. Cook the pasta:

    • Fry the pasta in oil until golden, then add water and cook until done.
  3. Prepare the sauce:

    • Mix the yogurt with the tomato paste, salt, and spices.
    • Pour the mixture over the cooked meat, ensuring it covers the meat entirely, and leave it for 20 minutes.
  4. Fry or bake the meat:

    • Fry the meat in plenty of oil until golden, or alternatively, bake it in the oven to reduce the fat.
    • Serve the meat over the pasta on a large plate.

Second Method:

  1. Marinate the ribs:

    • Mix all the spices with 3 cups of water and soak the lamb ribs in the mixture for 3 hours or overnight to absorb the flavors.
  2. Sear the ribs:

    • Heat the clarified butter in a pan over medium heat and sear the ribs after draining them, leaving the marinade aside.
    • Once browned, place the ribs on a rack.
  3. Bake the ribs:

    • In a roasting pan, layer the potatoes and onions, place the ribs on top, and pour the marinade over them.
    • Cover the pan with foil and bake in the oven for about an hour.
    • Remove the foil for the last few minutes to brown the ribs, and then it's ready to serve.
