Tagine of Freekeh with Fish – Ingredients and Preparation Method

Ingredients for Tagine of Freekeh with Fish:
- ½ kg of fish, cleaned and deboned
- 3 garlic cloves, finely minced
- 1 tomato, peeled and diced
- 1 cup of freekeh, washed and soaked for at least 2 hours
- ½ teaspoon ground black pepper
- ½ cup finely chopped onions
- 1 celery stalk
- ½ teaspoon ground coriander
- 1 onion, quartered
- 1 bay leaf
- 1 green pepper, chopped
- 1 tablespoon cumin
- ½ teaspoon salt and another ½ teaspoon minced garlic
- 2 tablespoons lemon juice
Preparation Method:
Prepare the Fish Broth:
- In a pot over medium heat, add the fish and cover it with water. Add the celery, bay leaf, carrot, salt, quartered onion, coriander, and pepper. Bring the mixture to a boil, then remove from the heat and strain the broth, setting it aside.
Season the Fish:
- Marinate the fish with lemon juice, ground coriander, salt, minced garlic, and black pepper. Set it aside to absorb the flavors.
Cook the Fish:
- In a separate pot over medium heat, add a tablespoon of oil and a tablespoon of butter. Sear the fish pieces until golden brown on both sides. Once done, remove the fish and set it aside.
Prepare the Freekeh:
- In the same pot, add a little more oil and sauté the celery and chopped onions for about 3 minutes until the onions soften.
- Add the minced garlic and chopped green pepper, stirring until the mixture is fragrant and cooked.
- Add the soaked freekeh to the pot and stir it with the vegetables for a few minutes. Then, pour in the reserved fish broth, covering the freekeh.
Assemble the Tagine:
- Add the diced tomatoes, cumin, ground coriander, salt, and pepper to the freekeh mixture and stir well.
- Lay the seared fish pieces on top of the freekeh, spreading the remaining diced tomatoes over the fish.
- Cover the pot with aluminum foil and bake it in a preheated oven at 180°C (350°F) for 15 minutes. After 10 minutes, remove the foil to allow the dish to brown slightly.
