Plain Tamiz Bread:

  1. Prepare the Dough:

    • In a large bowl, mix the flour, salt, powdered milk, instant yeast, and sugar.
    • Gradually add warm water while kneading by hand for about 10 minutes until a smooth dough forms (you can also use a mixer with a dough hook).
    • Once the dough is ready, cut it into 6 or 8 equal portions.
    • Shape each portion into a round ball.
  2. Rest the Dough:

    • Place the dough balls on a floured tray, keeping them spaced apart.
    • Lightly dust the top of the dough with flour and cover them with a cloth.
    • Let the dough rest in a warm place until it rises slightly.
  3. Shape the Dough:

    • Roll out each dough ball into a circular shape.
    • Lightly brush the surface with water and sprinkle sesame seeds and black seeds on top.
  4. Bake the Bread:

    • Place the dough on a baking tray (no need to grease it).
    • Preheat the oven to a high temperature and bake until the bread is fully cooked. Move it to the top rack of the oven to get a golden brown color.

Stuffed Tamiz Bread:

  1. Prepare the Dough:

    • Follow the same steps as for the plain tamiz until you reach the point of rolling the dough into circular shapes.
  2. Add the Stuffing:

    • Place a small amount of stuffing, such as cheese, mint, and olives, in the center of each dough round. Fold the dough over the filling, forming a small pouch or "sorra."
    • You can also make other stuffed versions with zaatar and olive oil.
  3. Shape the Bread:

    • Gently press the filled dough pouch with your hands, flattening it into a circular bread shape.
  4. Bake the Bread:

    • Place the stuffed dough on a baking tray and bake in a preheated oven at a high temperature until the bread turns golden brown. Move it to the top rack to finish browning.

Serving:

  • Serve the bread hot with salads or as a side to your favorite dishes.

Enjoy this versatile and delicious tamiz bread, perfect for any meal!
