  • 1 kilogram of chicken
  • 2 tablespoons of vinegar

For the marinade, you will need:

  • 4 minced garlic cloves
  • 1/2 teaspoon of crushed saffron and ground cardamom
  • 2 teaspoons of paprika
  • 1 teaspoon of ground ginger, ground coriander, and ground cardamom
  • 3 tablespoons of tomato paste
  • 1/2 cup of yogurt
  • 4 tablespoons of olive oil
  • 2 teaspoons of salt

For the coal smoke mix, you will need:

  • 1 teaspoon of ghee or oil (as preferred)
  • 2 to 3 pieces of coal

How to Cook Tandoori Chicken in the Oven

  1. Start by washing and cleaning the chicken thoroughly, then dry it. Cut the chicken into quarters and remove the skin. Pierce the chicken to allow the marinade to be absorbed, and place it in a glass dish.

  2. Rub the vinegar over the chicken to coat it well, then set the chicken aside.

  3. Now, prepare the marinade by mixing the garlic, coriander, saffron, cardamom, paprika, cumin, tomato paste, ginger, olive oil, yogurt, and salt in a deep glass bowl. Stir the ingredients until well combined, then pour the marinade over the chicken, ensuring the pieces are fully coated.

  4. Cover the dish with plastic wrap and refrigerate for several hours or overnight. After marinating, flip the chicken pieces to ensure the marinade is evenly distributed.

  5. Remove the chicken from the fridge and let it sit for a few minutes until it reaches room temperature.

  6. Preheat the oven to 200°C (390°F).

  7. Place the chicken pieces on a baking tray and put them in the oven, uncovered, for 30 minutes.

  8. To prepare the coal smoke mix, place the ghee or oil (depending on your choice) in a small piece of aluminum foil. Place this foil in the center of the tray and heat the coal until it turns red. Drop the coal into the ghee or oil, then cover the tray tightly with aluminum foil.

  9. Return the tray to the oven for 60 minutes. Serve the chicken hot and enjoy!
