  • 1 kg of small tomatoes, halved
  • 1 large red bell pepper, cut into quarters
  • 1 medium onion, cut into quarters
  • 3 cloves of garlic, sliced thinly
  • 1 teaspoon of salt
  • ¼ teaspoon of ground black pepper
  • 2 tablespoons of olive oil
  • 2 cups of chicken broth
  • 1 teaspoon of butter
  • 2 cloves of minced garlic
  • ½ cup of cooking cream

For Garnishing:

  • A moderate amount of finely chopped parsley

Preparation Method:

  1. Roasting the Vegetables: Preheat the oven to 180°C (350°F). In a baking dish, combine the halved tomatoes, red bell pepper quarters, quartered onion, sliced garlic, salt, and black pepper. Drizzle with olive oil and mix the ingredients using your fingers until everything is well coated.

  2. Baking: Place the dish in the middle rack of the oven and roast for about 20 minutes. Open the oven every 5 minutes to stir the vegetables, ensuring they don't burn and brown evenly.

  3. Blending: Once roasted, remove the dish from the oven and let it cool completely. Transfer all the roasted vegetables to a blender and blend on medium speed until smooth.

  4. Cooking the Soup: In a large stainless steel pot, melt the butter over medium heat. Add the minced garlic and stir until fragrant and golden. Then, add the blended tomato and red pepper mixture. Bring to a gentle simmer and season with salt. If the soup is too thick, you can add a bit of hot water to achieve the desired consistency.

  5. Finishing Touch: Finally, stir in the cooking cream, then transfer the soup to a serving dish. Garnish with finely chopped parsley and serve immediately.
