Tomato Baked Kofta – Recipe and Preparation Method
Tomato Baked Kofta is a delightful main dish that can be served for lunch. This dish is known for its rich flavor and nutritional benefits, offering a high dose of proteins and vitamins essential for the body. It is a luxurious, hearty meal perfect for family gatherings and feasts.
Ingredients for Tomato Baked Kofta:
Kofta Mixture:
- 1 kg of finely ground meat
- 2 large onions
- 4 garlic cloves
- 2 green chili peppers
- 1 cup of finely chopped parsley
- 1/4 cup of finely chopped mint
- 1 1/2 teaspoons of salt
- 1/2 teaspoon of ground black pepper
- 1 teaspoon of mixed spices
- 3 large tomatoes
Broth Mixture:
- 1/2 cup of fresh lemon juice
- 2 tablespoons of pomegranate molasses
- 2 garlic cloves
- 1/2 teaspoon of mixed spices
- 1/2 teaspoon of ground cardamom
- 1 cup of water
For Garnishing:
- A medium amount of pine nuts
Preparation Method:
Prepare the Kofta:
- In a food processor, combine the ground meat, onions, garlic, green chili peppers, parsley, mint, salt, black pepper, and mixed spices. Blend on medium speed for a few minutes until you have a well-mixed kofta blend.
Shape and Arrange the Kofta:
- Remove the kofta mixture from the food processor and shape it into finger-sized pieces. Arrange the kofta fingers side by side in a circular pattern in a baking tray. Peel the tomatoes, cut them into half-moon slices, and place them between the kofta pieces and on top of the kofta.
Prepare the Broth:
- In a large cup, mix the lemon juice, pomegranate molasses, garlic, mixed spices, ground cardamom, and water. Stir well with a spoon, then pour the broth evenly over the kofta in the tray.
Bake the Kofta:
- Preheat the oven to 180°C (356°F). Place the tray on the middle rack and bake for 60 minutes until the kofta is fully cooked.
Garnish and Serve:
- Once baked, garnish the kofta with pine nuts and serve hot.
