Tomato Yaghmish – Recipe and Preparation Method

Tomato Yaghmish is a popular Gulf appetizer served at family and friend gatherings. It is known for its delicious taste and high-calorie content, providing energy throughout the day.

This dish is easy to prepare and does not require much time or effort.

Main Ingredients for Tomato Yaghmish:

Dough Ingredients:

  • 4 cups of all-purpose flour
  • ½ cup of vegetable shortening (or substitute with sunflower oil if unavailable)
  • 1 teaspoon of salt
  • ½ teaspoon of instant yeast (dissolved in ½ cup of lukewarm water)
  • 2 medium eggs

Filling Ingredients:

  • 500 grams of finely minced fatty lamb
  • 1 large tomato, peeled and finely chopped
  • 3 large onions, finely chopped
  • 1 teaspoon of salt
  • ½ teaspoon of ground black pepper
  • 2 tablespoons of sunflower oil

Preparation Method:

  1. Preparing the Dough: In a large bowl, combine the flour and salt, mixing well. Add the eggs and whisk them into the flour using a hand whisk. Add the vegetable shortening and the dissolved yeast mixture, kneading the dough with your fingertips for about 5 minutes until you achieve a smooth, cohesive dough. If the dough feels slightly dry, add a little more water to reach the desired consistency. Cover the dough with plastic wrap and let it rest in a warm place for 60 minutes to rise and relax.

  2. Preparing the Filling: Heat sunflower oil in a wide, heavy-bottomed skillet over medium heat. Add the chopped onions and sauté with a wooden spoon until they turn light golden. Add the chopped tomatoes and let them cook on low heat for about 7 minutes until softened.

  3. Add the minced lamb, stirring well, and cook for 10 minutes on low heat until partially cooked. Add the black pepper and salt, and continue cooking until the meat is fully cooked.

  4. Assembling the Yaghmish: Divide the dough into small balls. Roll out each ball on a floured surface using a rolling pin to form a circular shape. Place a tablespoon of filling in the center, fold the dough into an oval shape, and seal the edges tightly. Repeat the process until all the dough balls are filled.

  5. Arrange the Yaghmish pieces on a baking tray. Preheat the oven to 220°C (428°F), place the tray on the middle rack, and bake for 10-12 minutes until the Yaghmish turns light golden.

  6. Remove from the oven and serve hot.
