  • 2 cups of rice
  • 2 cans of tuna
  • 2 tablespoons of vegetable oil
  • 2 medium-sized onions, finely chopped
  • 1 medium-sized green pepper, finely chopped
  • 1 medium-sized tomato, finely chopped
  • 1 tablespoon of tomato paste
  • Salt (to taste)
  • 5 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 1 chicken bouillon cube
  • 1 teaspoon of saffron mixed with a small amount of drinking water
  • 3 whole cardamom pods
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 teaspoon of Kabsa spices

Steps to Prepare Tuna Kabsa:

  1. Sautéing the Vegetables:
    Heat the vegetable oil in a suitable pot over medium heat. Add the chopped onions and sauté, stirring occasionally until softened.

  2. Adding Aromatics:
    Add the minced garlic, chopped green pepper, chopped tomato, and grated ginger. Cover the pot and let the mixture cook for about 2 minutes.

  3. Adding Tuna and Spices:
    Remove the lid and add the tuna, chicken bouillon cube, tomato paste, whole cardamom pods, bay leaf, cinnamon stick, Kabsa spices, and salt. Gently stir the ingredients until they are well combined. Let the mixture cook for another 4 minutes.

  4. Cooking the Rice:
    Add the rice along with 4 cups of water. Bring the mixture to a boil, then reduce the heat, cover the pot, and let it simmer until the liquid is absorbed and the rice is fully cooked.

  5. Finishing Touches:
    Once the rice is cooked, pour the saffron mixture over the rice and gently stir the ingredients to combine.

  6. Serving:
    Remove the pot from the heat and transfer the Tuna Kabsa to a serving dish.
