  • 400g lamb meat
  • 1kg lamb intestines (tripas)
  • 150g lamb heart
  • 20g lamb liver
  • Various pieces of lamb fat (tail fat or lya)
  • 1 cup of bulgur or soaked rice (as desired)
  • 1 cup of soaked chickpeas
  • 1 cup of finely chopped onion
  • 1 bunch of parsley and Swiss chard
  • 1 teaspoon each of: red pepper, black pepper, salt, tabil (Tunisian spice mix), and ground caraway
  • 3 tablespoons of peeled tomatoes, diced
  • 2 large tablespoons of tomato sauce
  • Olive oil (as desired)
  • 10 cloves of garlic
  • Dried mint (as desired, preferably small quantities)

How to Prepare Tunisian Osban

  1. Start by washing the lamb intestines (tripas) thoroughly with hot water until they become white. Cut the intestines into large pieces and sew each piece to form the Osban casing, then set them aside after sewing.

  2. Dice the lamb fat, heart, liver, and meat into small pieces and set them aside in a bowl.

  3. Finely chop the parsley and Swiss chard, then sprinkle them over the meat mixture.

  4. Add the bulgur (or soaked rice), chickpeas, chopped onions, olive oil, tabil, red and black pepper, ground caraway, dried mint, and minced garlic to the meat mixture. Mix all the ingredients well.

  5. Stuff the sewn pieces of intestines with the meat mixture, ensuring they are filled evenly. Sew the openings tightly to prevent the stuffing from spilling out during cooking.

  6. In a steamer pot, bring water to a boil, then add the stuffed Osban. Add finely chopped red onions, olive oil, red and black pepper, diced tomatoes, and tomato sauce.

  7. Cover and steam the Osban for about 30 minutes until fully cooked.

  8. Once done, remove the Osban from the heat and serve alongside a delicious sauce of your choice.
