Turkish Farmer’s Kofta – Recipe for Cooking Turkish Farmer’s Kofta

This recipe serves 4 people.
Ingredients:
- 1 cup of fine brown bulgur
- 1 ½ liters of hot water
- 1 small potato
- 1 egg
- 1 tablespoon of flour
- 1 teaspoon of salt (or to taste)
- ½ teaspoon of black pepper
- ½ teaspoon of hot red pepper powder
- ¼ teaspoon of ground cumin
Ingredients for the Sauce:
- 4 tablespoons of vegetable oil
- 1 tablespoon of tomato paste
- 2 cloves of mashed garlic
- 1 cup of hot water
- ¼ teaspoon of salt
- A handful of chopped parsley for garnish
How to Prepare Turkish Farmer’s Kofta:
Start by placing the fine bulgur in a bowl and adding a cup of hot water. Set it aside to soak.
Peel and cut the potato, then boil it in a pot with a cup of hot water until it’s well-cooked.
Once the potato is cooked, drain the water and add the potato to the soaked bulgur.
Whisk the egg and add it to the bulgur and potato mixture. Then, add the salt, black pepper, red pepper, cumin, and flour. Knead the mixture well until it forms a firm dough.
If needed, add more flour to achieve a firm dough consistency.
Shape the dough into small, equal-sized balls.
In a separate pot, bring the remaining hot water with a pinch of salt to a boil. Add the kofta balls and let them cook for about 5 minutes.
Once done, remove the kofta from the water and drain them well.
To prepare the sauce, heat the oil in a clean pan, then add the tomato paste and mashed garlic, stirring gently. Add the hot water while continuing to stir, then sprinkle in the salt. Let the mixture simmer on low heat for about 7 minutes until well combined.
Now that the sauce is ready, place some kofta balls on a serving dish and drizzle a little sauce over them or as much as desired.
Garnish with chopped parsley for an extra touch of freshness.
