Fatteh is a popular dish across many countries, prepared in various ways depending on the region. In Turkish cuisine, it is made with eggplant and meat, offering a nutritious meal rich in proteins, making it especially favored during Ramadan in the Arab world.

Ingredients for Turkish Fatteh:

  • 3 Arabic flatbreads
  • 3 eggplants
  • 2 green bell peppers
  • 2 tablespoons of olive oil
  • 3 cups of yogurt
  • 4 cloves of garlic, crushed
  • 1 teaspoon of salt
  • 3 tablespoons of butter or ghee
  • 400 grams of coarsely ground meat
  • 1 tomato, peeled and chopped
  • ½ teaspoon of black pepper
  • ½ teaspoon of crushed red pepper
  • ¼ teaspoon of mixed spices
  • Chopped parsley for garnish

Preparation Method:

Turkish Fatteh


  1. Prepare the Bread:

    • Preheat the oven to 200°C. Cut the Arabic flatbread into small cubes and spread them on a baking tray. Toast the bread in the oven until golden, then set aside.
  2. Roast the Vegetables:

    • Poke holes in the eggplants using a fork, then place them on a high-edged tray along with the bell peppers, cut in half.
    • Roast the eggplant and bell peppers in the oven for 30 minutes. Once roasted, peel the eggplant and cut both the eggplant and peppers into small pieces.
  3. Sauté the Vegetables:

    • In a pan, heat olive oil over medium heat. Add the green bell peppers and sauté until fragrant. Then add the eggplant and stir for about 2 minutes. Season with salt and black pepper.
  4. Prepare the Yogurt Sauce:

    • In a large bowl, mix the yogurt with the crushed garlic and salt. Stir well until combined.
  5. Cook the Meat:

    • In another pan, heat some oil and cook the ground meat over medium heat until fully cooked. Add the chopped tomato, crushed red pepper, black pepper, and mixed spices. Stir until the tomatoes soften slightly but do not completely dissolve.
  6. Assemble the Fatteh:

    • In a serving dish, layer the ingredients as follows:
      • First, place the toasted bread at the bottom.
      • Pour a third of the yogurt over the bread.
      • Add the sautéed eggplant and peppers on top.
      • Add another third of the yogurt.
      • Layer the meat and tomato mixture over the yogurt.
      • Finally, pour the remaining yogurt on top and garnish with chopped parsley.
