Turkish Trileçe cake is a traditional, spongy cake from Turkish cuisine, which reflects the rich interaction of various cultures over time, including Kurdish, Persian, Arabic, Indian, and Armenian influences. Its popularity spread widely in Istanbul and then across other Turkish cities and the world. Trileçe is also known as the "Three Milks Cake" because it is traditionally soaked in three types of milk: evaporated milk, condensed milk, and heavy cream. This dessert is also dubbed the "Legend of the Balkans" due to its widespread acclaim.

Ingredients for Trileçe Cake:

For the Cake:
  • 1 cup sugar
  • 1 packet of vanilla
  • 1 packet of baking powder
  • 4 eggs
  • ¼ cup flour

For the Milk Sauce:

  • 4 cups cold liquid milk
  • 3 tablespoons sugar
  • 1 can (200 ml) of liquid cream

For the Caramel Sauce:

  • 1 tablespoon butter
  • 1 cup liquid cream
  • 1 cup sugar

For Garnishing:

  • 1 packet of Chantilly cream
  • 1 cup semi-skimmed milk

How to Prepare Turkish Trileçe Cake:

  1. Prepare the Cake Batter: Beat the eggs, then add the sugar and vanilla. Mix well using a wire whisk until the color turns pale white. Gradually add the baking powder and flour, continuing to mix until the ingredients are well combined.

  2. Bake the Cake: Grease the baking tray with melted butter, pour the Trileçe cake batter evenly into the tray, and bake in a preheated oven at around 170°C (338°F) for about 30 minutes.

  3. Pierce the Cake: Once baked, remove the cake from the oven and poke small holes throughout to help absorb the milk sauce later.

  4. Prepare the Milk Sauce: In a bowl, mix the whipped cream with sugar and cold milk, then pour this mixture over the cake, ensuring it is fully soaked.

  5. Prepare Chantilly Cream: In a deep bowl, mix the Chantilly cream powder with the semi-skimmed milk using a whisk until it thickens. Spread the Chantilly cream evenly over the cake's surface, then refrigerate for at least three hours.

  6. Make the Caramel Sauce: Heat a cup of sugar in a saucepan over low heat, stirring until it caramelizes and thickens. Add the butter, mixing until it melts and blends with the sugar, then gradually add the cream while stirring continuously. Once the desired consistency is reached, remove from heat and let cool.

  7. Finish the Cake: Pour the prepared caramel sauce over the Chantilly cream layer. For an elegant touch, you can decorate the Trileçe with thin lines of white whipped cream.
