Umm Ali is a popular dessert in Arab countries, especially in Egypt. It is known for its delicious taste and various health benefits, as it contains milk rich in proteins and provides a high amount of calories, giving energy throughout the day. This dish is a favorite among both children and adults, making it perfect for family gatherings.

It’s easy to prepare and doesn’t require much time or effort.

Main Ingredients for Preparing Umm Ali:

  • 2 cups of liquid milk
  • 1 ½ cups of fine granulated sugar
  • ½ cup of sweetened condensed milk
  • 1 teaspoon of vanilla extract (if not available, you can use vanilla powder instead)
  • Half a loaf of French bread, toasted and cut into small squares
  • ¼ cup of green pistachios
  • ¼ cup of green almonds
  • ¼ cup of cashews
  • ¼ cup of raisins
  • ¼ cup of sliced almonds
  • 1 cup of cream
  • 1 cup of sweetened condensed milk
  • 1 cup of fine granulated sugar

Ingredients for Serving:

  • A moderate amount of grated green pistachios

How to Prepare Umm Ali:

First, in a large, deep pot, pour the milk and add the sugar. Place it over medium heat while continuously stirring. Then, add the sweetened condensed milk and vanilla. Mix everything well using a hand whisk until you achieve a smooth and well-combined mixture.

Next, prepare a medium-sized baking dish. Arrange the toasted bread squares inside, and evenly sprinkle the pistachios, almonds, cashews, and raisins over them, ensuring they are distributed evenly across the dish. Pour the milk mixture over everything.

Now, in a separate medium-sized bowl, place the cream and sweetened condensed milk. Stir them together using a hand whisk until the ingredients are well combined. Gently pour the cream mixture over the bread and nuts in the baking dish, making sure to cover it evenly.

For the final touch, sprinkle your choice of nuts on top of the cream mixture (adjust the types of nuts according to preference). Preheat the oven to 180°C (350°F), place the dish on the middle rack, and bake for 15 minutes until the surface turns a light golden color. Then, remove the dish from the oven, sprinkle sugar over the top, and return it to the oven to melt and caramelize.

Once done, take the dish out, garnish it with grated pistachios, and serve immediately while hot.
