  • 12 sheets of muttabaq dough
  • 1 large onion, finely chopped
  • ¾ cup of chopped parsley
  • ½ cup of chopped leeks
  • Salt to taste
  • Black pepper to taste
  • 1 medium-sized egg
  • 2 large chicken breasts, finely minced
  • ½ bunch of chopped mint
  • Vegetable oil as needed

How to Prepare Vegetable Muttabaq:

  1. Prepare the Filling:

    • Heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the chopped onion and sauté until softened.
    • Add the minced chicken breasts, black pepper, and salt. Stir everything together until well combined.
    • Continue cooking and stirring the mixture until the chicken is fully cooked. Then, add the egg and stir until it is cooked and well incorporated with the other ingredients.
    • Remove the pan from the heat and allow the filling to cool slightly. Add the chopped parsley, mint, and leeks, stirring to combine everything evenly.
  2. Assembling the Muttabaq:

    • Place one sheet of dough on a flat surface and spoon a suitable amount of the chicken and vegetable filling onto it.
    • Cover the filling with another sheet of dough and seal the edges to form a square shape. You can use a mixture of water and all-purpose flour to help seal the edges securely.
    • Repeat the process with the remaining dough and filling.
  3. Cooking the Muttabaq:

    • Heat a small amount of vegetable oil in a non-stick pan. Place one piece of the prepared muttabaq in the pan and cook it, flipping occasionally, until it is golden brown and cooked through on all sides.
    • Remove it from the heat and transfer it to a serving plate.
  4. Repeat:

    • Continue cooking the remaining pieces of muttabaq in the same manner.
