Ingredients:

For the Vegetables:

  • 2 large red bell peppers, sliced
  • 3 onions, sliced
  • 1 cup of pre-cooked green beans
  • 1 cup of sliced mushrooms
  • 1 tablespoon of crushed garlic
  • 1 teaspoon of allspice
  • Salt to taste
  • ¼ teaspoon of ground sumac
  • 4-5 tablespoons of pomegranate molasses (adjust to taste)
  • 3 tablespoons of vegetable oil

For the Rice:

  • 1 cup of rice (Egyptian or American rice can be used)
  • 2 cups of water
  • A small amount of minced meat (up to 100 grams)
  • Salt to taste
  • ½ teaspoon of allspice
  • 1 teaspoon of ground cinnamon
  • 3 tablespoons of olive oil
  • 2 tablespoons of vegetable oil
  • 1 finely chopped onion

Preparation Steps:

Vegetable Rice with Pomegranate Molasses


  1. Prepare the Rice:
    Rinse the rice thoroughly until the water runs clear. Soak the rice for about 20 minutes, then drain it before use.

  2. Sauté the Vegetables:
    Heat the oil in a pan, add the onions, and sauté until golden. Add the mushrooms and stir on high heat for 5 minutes. Add the red bell peppers and continue stirring on high heat for another 10 minutes until the vegetables are slightly crispy. Add the garlic, green beans, salt, allspice, sumac, and pomegranate molasses. Stir well, then remove from heat.

  3. Cook the Meat and Rice:
    In another pot, heat vegetable oil and sauté the finely chopped onion until golden. Add the minced meat and cook until the water evaporates completely. Reduce the heat and season with cinnamon and allspice.

  4. Add the Rice:
    Add the drained rice to the meat, pour in the water, and add salt. Increase the heat until the water boils, then cover the pot and reduce the heat to low. Cook until the rice is fully done.

  5. Finish with Olive Oil:
    Stir the rice gently with olive oil, which adds a beautiful shine and unique flavor.

  6. Serve:
    Spoon the rice onto a serving dish and top with the crispy sautéed vegetables mixed with the delicious pomegranate molasses. For an extra touch, add some fried nuts on top.
