Vegetable spring rolls are a delicious and nutritious dish that’s easy to prepare. It takes about 65 minutes to make and cook this dish, which serves eight people. Here's how to prepare these tasty rolls.

  • 2 tablespoons of grated ginger
  • 2 large onions, sliced
  • 4 cloves of minced garlic
  • 4 medium zucchini, sliced thinly
  • 4 medium carrots, sliced thinly
  • 1 medium green bell pepper, sliced thinly
  • Black pepper to taste
  • 4 cups of cabbage, sliced
  • ¼ cup of oyster sauce
  • 50 spring roll wrappers
  • 2 vegetable stock cubes
  • 4 cups of vegetable oil
  • 2 eggs, beaten

For the Sauce:

  • 2 hot chili peppers
  • 6 cloves of peeled garlic
  • 1 cup of sugar
  • ½ cup of white vinegar
  • 1¾ cups of water
  • 1 teaspoon of salt
  • 2 tablespoons of cornstarch

How to Prepare Vegetable Spring Rolls:

  1. Prepare the Filling:

    • Heat a small amount of vegetable oil in a pan over medium heat. Add the sliced onions and sauté until soft.
    • Add the vegetable stock cubes, ginger, and minced garlic. Stir the mixture for 2 minutes.
    • Add the cabbage, bell pepper, zucchini, and carrots. Stir until all ingredients are well combined. Add the oyster sauce and black pepper to taste.
    • Stir the ingredients occasionally until the vegetables are tender, then remove from heat and let the filling cool.
  2. Assemble the Spring Rolls:

    • Lay a spring roll wrapper flat and place a portion of the vegetable filling in the center. Fold the wrapper over the filling, tucking in the sides, and roll it up tightly. Brush the edges with the beaten egg to seal.
    • Repeat this process until all the filling and wrappers are used.
  3. Fry the Spring Rolls:

    • Heat the remaining vegetable oil in a pot over medium heat. Once the oil is hot, fry the spring rolls in batches, turning them occasionally, until they are golden brown on all sides.
    • Remove the spring rolls from the oil and place them on paper towels to drain any excess oil.
  4. Prepare the Sauce:

    • In a blender or food processor, combine the chili peppers, garlic, sugar, and vinegar. Blend until smooth.
    • Pour the mixture into a pot over medium heat and bring to a boil. Reduce the heat and simmer for 3 minutes.
    • In a small bowl, mix the cornstarch with water until dissolved, then add it to the sauce. Stir until the sauce thickens, then remove from heat.
  5. Serve:

    • Serve the golden spring rolls alongside the dipping sauce and enjoy!
