Ingredients for Vegetarian Shepherd's Pie:
- 4 medium potatoes, peeled and cut into medium chunks
- 1 onion, finely chopped
- 1 cup fresh or frozen green peas
- ½ cup boiled corn kernels
- 2 cloves garlic, minced
- ¼ cup soy milk
- 2 heaping tablespoons of margarine or plant-based butter
- 1 tablespoon salt (or to taste)
- ¼ tablespoon black pepper (or to taste)
- 1 tablespoon vegetable oil
- 1½ cups water
- 1 vegetable bouillon cube
- ¼ tablespoon red pepper powder (optional for heat)
How to Make Vegetarian Shepherd's Pie:
Preheat the Oven: Before starting, preheat your oven to about 180°C (350°F).
Cook the Potatoes: Place the potato chunks in a pot with plenty of water and a pinch of salt. Bring to a boil and cook until the potatoes are tender, then drain them.
Mash the Potatoes: In a bowl, mash the cooked potatoes with 2 tablespoons of margarine, ¼ cup of soy milk, salt, and black pepper to taste. Mash everything until smooth and set aside.
Prepare the Vegetable Filling: In a large pan, heat 1 tablespoon of vegetable oil over medium heat. Add the chopped onion and sauté until it becomes golden and translucent. Pour in 1½ cups of water and add the vegetable bouillon cube. Stir until dissolved.
Add Vegetables: Add the minced garlic, boiled corn, peas, and red pepper powder to the pan. Stir well and let the mixture simmer until it thickens slightly.
Assemble the Pie: In a baking dish, spread the vegetable mixture evenly on the bottom. Then, spread the mashed potatoes on top, making sure the potato layer is evenly distributed and as thick as the vegetable layer.
Bake: Place the baking dish in the preheated oven and bake for about 30 minutes, or until the top becomes golden and crispy.
Serve: Remove the pie from the oven and let it cool slightly before serving. Cut into squares and serve hot.
This vegetarian shepherd’s pie is best enjoyed warm, and it pairs well with a fresh salad or some crusty bread.
Enjoy your delicious, hearty meal!
