Vermicelli with Chicken – Recipe and Preparation Method
Vermicelli with chicken is a delicious dish that can be served as a main course either for lunch or dinner, depending on your preference. This recipe is rich in nutrients and provides the body with energy throughout the day. It is easy to prepare and does not require much time or effort, making it perfect for serving four people at the table with a cooking time of 40 minutes.
Main Ingredients for Vermicelli with Chicken:
- 750 grams of vermicelli
- 4 chicken thighs
- 1 medium-sized onion, peeled and finely chopped
- 2 cloves of garlic, finely minced
- 1 large carrot, diced into small cubes
- 1 celery stick, diced into small cubes
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- 2 bay leaves
- 2 teaspoons salt
- ½ teaspoon ground black pepper
- 1 tablespoon tomato paste
- 2 cups broth
- ½ cup soaked chickpeas
- 2 medium-sized potatoes, peeled and diced into medium cubes

- Finely chopped parsley
Preparation Method:
Sauté the Vegetables:
- In a large, deep pot, heat the olive oil over high heat. Add the chopped onion and sauté, stirring with a wooden spoon until it turns light golden. Add the minced garlic and continue stirring until its aroma fills the kitchen.
Cook the Vegetables and Chicken:
- Add the diced carrots and celery, stirring for a few minutes until the vegetables are slightly cooked. Add the thyme, rosemary, and bay leaves, and stir well to combine all the ingredients. Add the chicken thighs, mixing them with the rest of the ingredients, and cook for about 10 minutes until the chicken absorbs the flavors.
Prepare the Sauce:
- In a small bowl, mix the tomato paste with the broth. Pour this mixture into the pot and bring it to a boil. Once it starts boiling, add the soaked chickpeas. Reduce the heat to low and let it simmer until the chicken is fully cooked.
Add the Potatoes and Cook the Vermicelli:
- After about 20 minutes, add the diced potatoes. Place the vermicelli in a large colander, pour 2 tablespoons of water and 2 tablespoons of olive oil over it, then place the colander over the pot and cover it. Let the vermicelli steam, stirring occasionally, until fully cooked.
Serve:
- Arrange the cooked vermicelli on a serving plate, pour some chicken broth over it, and top it with the chicken thighs and vegetables. Garnish with finely chopped parsley for a beautiful and balanced presentation, then serve immediately while hot.
