White beans are a type of legume commonly found in almost all Arab countries. They can be cooked with rice in various ways, including as a hearty stew. White beans are highly nutritious and provide essential proteins to the body.

Ingredients for White Bean Stew:
For boiling the beans:
- 2 teaspoons of baking soda.
- ½ kilogram of white beans.
- 1 teaspoon each of cumin and salt.
- 1 small onion, quartered.
For boiling the meat:
- 3 tomatoes, chopped.
- 1 kilogram of lamb shank, cut with the bone.
- 3 tablespoons of tomato paste.
- 1 teaspoon each of salt, ground coriander, and mixed spices.
- 2 green chili peppers, halved.
- ¼ teaspoon of black pepper.
- 3 tablespoons of ghee.
- 4 cloves of garlic, minced.
Preparation Method for White Bean Stew:
1. Prepare the beans:
- In a large bowl, mix 8 to 10 cups of water with the baking soda until dissolved. Add the white beans and let them soak.
- Drain the beans and transfer them to a deep pot. Add 8 cups of water, salt, onion, and cumin. Bring the pot to a boil over medium heat.
- Once it boils, skim off any foam that forms on the surface. Boil the beans for about 30 to 40 minutes, or until tender. You can check if the beans are done by pressing on them; if they crumble, they are cooked. Set them aside.
2. Boil the meat:
- In a large deep pot, add the meat, cardamom, cinnamon, onion, black pepper, garlic, and bay leaves. Pour in enough water to cover the ingredients and bring to a boil over high heat.
- Reduce the heat to low and let the meat simmer for about 50 minutes, or until fully cooked.
3. Prepare the tomato sauce:
- Blend the tomatoes in a blender until you get a smooth tomato sauce.
4. Cook the stew:
- In another large pot over high heat, add the beans, cooked meat, tomato paste, tomato sauce, green chili peppers, salt, and spices. Pour in enough meat broth to cover the ingredients and reduce the heat to low. Let the stew simmer for 15 minutes.
5. Add the garlic-coriander mixture:
- In a small pan, heat the ghee. Add the garlic and coriander, and sauté until the garlic turns golden brown.
- Stir the garlic mixture into the stew and allow it to simmer for a few more minutes.
6. Serve:
- Transfer the white bean stew to a serving dish and enjoy it hot.
