Yemeni Muttabaq – Recipe and Preparation Method
Yemeni Muttabaq is a delicious traditional dish that can be served as a main course at dinner. It stands out with its unique taste and is easy to prepare, making it ideal for family gatherings, Ramadan, or as an appetizer during Iftar.
Main Ingredients for Yemeni Muttabaq:
For the Dough:
- 3 cups all-purpose flour
- 1 tablespoon sunflower oil
- 1 large egg
- A pinch of salt
- 1 cup warm water
For the Filling:
- 500 grams ground meat
- 2 medium onions, finely chopped
- 1 medium potato, cut into small cubes
- 1 clove garlic, finely minced
- 4 medium tomatoes, peeled and finely chopped
- ½ teaspoon dried coriander
- 3 large eggs, beaten
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon ground cumin
- 1 cup shredded mozzarella cheese
- 1 green onion, finely chopped
For Frying:
- 4 tablespoons sunflower oil
Preparation Method for Yemeni Muttabaq:
Prepare the Dough:
- In a mixing bowl, combine flour, sunflower oil, egg, and salt. Gradually add warm water while kneading until a smooth and cohesive dough forms.
- Divide the dough into small balls, place them on a tray, brush with sunflower oil, cover with plastic wrap, and let them rest in a warm place for 15-20 minutes.
Prepare the Filling:
- In a large pot, heat the oil over medium heat, add onions, and cook until golden. Add minced garlic and stir until fragrant.
- Add the ground meat, stir, and cook until the liquid evaporates. Add the green onion, tomatoes, dried coriander, cumin, potato cubes, salt, beaten eggs, and mozzarella cheese. Mix well and cook on low heat until the meat is fully cooked.
Assemble the Muttabaq:
- Roll out each dough ball into a thin circle, place a portion of the filling in the center, and fold into a square. Repeat with the remaining dough and filling.
Cook the Muttabaq:
- In a wide skillet, heat sunflower oil over medium heat. Cook each folded Muttabaq until golden on both sides.
Serve:
- Arrange the Muttabaq on a serving plate and serve hot, optionally with a side of Ayran yogurt for an extra tangy flavor.
