Zarda Al-Bayda with Cream

  • 1 kilogram of Egyptian rice, soaked for at least 12 hours
  • 2 cups of roasted almonds
  • 2 cups of powdered milk
  • 2 cans of cream
  • 250 grams of butter
  • 1 teaspoon of saffron
  • 1 teaspoon of almond flavoring dye
  • 5 cups of sugar
  • 1 teaspoon of ground cardamom
  • 4 tablespoons of cornstarch
  • 1 teaspoon of vanilla
  • Ground cinnamon for garnish
  • 1 teaspoon of rose water
  • 3 liters of water

How to Prepare Zarda Al-Bayda with Cream

  1. Begin by washing and kneading the soaked rice thoroughly until it's finely ground. Place the ground rice in a large pot filled with water.

  2. After 20 minutes, blend the rice mixture using a blender to ensure smoothness.

  3. Place 500 grams of the rice in a pot, along with the sugar and powdered milk, and mix them well over medium heat.

  4. Add 125 grams of butter and one can of cream to the rice mixture, stirring well. Then, add the rose water and vanilla, mixing them until fully combined.

  5. In another pot, place the remaining rice along with the almond flavoring dye, saffron, 2 cups of sugar, and ground cardamom. Mix everything together thoroughly.

  6. Dissolve the cornstarch in half a cup of cold water until it fully dissolves, then pour it into the rice mixture and stir until the mixture thickens and becomes smooth.

  7. Add the roasted almonds to the yellow zarda mixture and stir them in.

  8. To serve, take a large dish and pour the white zarda with cream on one side and the yellow zarda on the other. Once it cools down, sprinkle ground cinnamon and almonds on top for garnish.
