Ingredients for Zerbian with Meat:

  • 1 kg of lamb with bones, plus a medium-sized piece
  • 2 cups of long-grain rice
  • 3 large onions
  • 3 potatoes, peeled
  • 4 garlic cloves
  • ½ cup of oil and yogurt
  • 4 cloves and 4 cardamom pods
  • 5 whole peppercorns
  • 2 cinnamon sticks
  • 1 tablespoon of saffron
  • 1 teaspoon of ground black pepper and yellow food coloring
  • Mixed spices for meat
  • A pinch of salt to taste

Preparation Method:

Zerbian with Meat


  1. Prepare the Rice:

    • Wash the rice and soak it for 30 minutes in a large bowl. Soak the saffron and yellow food coloring in a little water as well.
  2. Prepare the Onions:

    • Slice the onions and fry them in oil until they turn golden. Set them aside.
  3. Cook the Meat:

    • In the same oil used for frying the onions, fry the lamb pieces along with the minced onions and a bit of water. Cook until the water evaporates.
    • Add the ground spices, potatoes, yogurt, saffron, garlic, and enough water to the meat. Cook on low heat until the meat is fully tender.
  4. Cook the Rice:

    • In a large pot, bring some water to a boil, adding salt, cloves, cinnamon, cardamom, and peppercorns. Add the soaked rice to the pot and cook it until it is partially cooked (not fully done).
    • Once the rice is partially cooked, add the cooked meat with the saffron and yellow food coloring. Add the previously fried onions to the rice as well. Cover and cook on low heat until the rice is fully cooked.
  5. Add Charcoal Flavor (Optional):

    • Heat a piece of charcoal until it turns red. Wrap the charcoal in aluminum foil and place it in the middle of the pot of rice. Cover the pot to allow the rice to absorb the smoky flavor.
  6. Serve:

    • Once the rice is fully cooked, transfer the Zerbian with meat to a serving dish. You can serve it with your choice of salad on the side.
