Zucchini and Oat Soup is a delicious appetizer that can be served during lunch or dinner before the main course.   • ¼ teaspoon ground cardamom
  • ¼ cup oats
  • 2 tablespoons cold butter
  • 1 medium-sized onion, finely chopped
  • ½ teaspoon ground black pepper
  • 2 cloves garlic, finely crushed
  • 3 large zucchinis, diced
  • 1 large carrot, diced
  • 1 stalk of celery, finely chopped
  • 6 cups chicken broth (dissolve 1 chicken bouillon cube in each cup of warm water)
  • 1 teaspoon salt
  • 1 bay leaf
  • ½ cup liquid milk
  • 1 tablespoon finely chopped parsley

Preparation Method:

  1. Cooking the Vegetables: Start by placing the butter in a large pot over medium heat until it completely melts. Add the chopped onion and crushed garlic, stirring continuously with a wooden spoon until the garlic's aroma fills the kitchen and the onion turns light golden.

  2. Adding Vegetables and Spices: Add the diced zucchini, carrot, and celery to the pot along with the chicken broth, salt, black pepper, ground cardamom, and the bay leaf. Stir well to combine all the ingredients, then cover the pot and let the vegetables simmer over low heat for 30 minutes until fully cooked. Remove and discard the bay leaf.

  3. Blending and Cooking the Soup: Pour half of the soup into a blender and blend until smooth. Return the blended mixture to the pot with the remaining chunky soup. Add the oats, and let the soup simmer on medium heat for about 5 minutes until the oats are cooked.

  4. Finishing the Soup: Stir in the milk, using a hand whisk, and continue stirring for 3 to 5 minutes without allowing the soup to boil.

  5. Serving: Turn off the heat, ladle the soup into individual bowls, sprinkle each with some chopped parsley, and serve hot.
