Zucchini with yogurt is a main dish that can be served for lunch.   • 1 teaspoon salt
  • 1 teaspoon mixed spices
  • 200 grams ground meat
  • 1 cup Egyptian rice
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ghee
  • 1 kilogram medium-sized zucchini

Yogurt Mixture:

  • 3 cups yogurt
  • 1/4 cup tahini
  • 3 cloves garlic
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1 1/2 teaspoons dried coriander
  • 1 cup water
  • 2 tablespoons finely chopped fresh coriander

How to Prepare Zucchini with Yogurt:

  1. Prepare the Zucchini:

    • Wash the zucchini well and hollow them out. In a large bowl, fill three-quarters with water and add a tablespoon of salt. Place the zucchini in the salted water for about 7 minutes, then drain and set aside.
  2. Prepare the Filling:

    • Rinse the rice several times and soak it in water for 30 minutes. In a large bowl, combine the soaked rice with the ground meat, spices, salt, turmeric, ground cinnamon, finely chopped onion, minced garlic, and ghee. Mix thoroughly using your fingers until well combined.
  3. Stuff the Zucchini:

    • Fill the zucchini with the prepared mixture, leaving about half a centimeter at the end unfilled. Repeat until all filling is used.
  4. Boil the Zucchini:

    • In a large pot, bring plenty of water to a boil. Once boiling, add a tablespoon of salt and the stuffed zucchini, allowing them to cook for no more than 10 minutes.
  5. Prepare the Yogurt Mixture:

    • In a blender, combine yogurt, tahini, garlic, cornstarch, salt, dried coriander, and water. Blend on medium speed until smooth.
  6. Cook the Yogurt Mixture:

    • Pour the yogurt mixture into a large pot and heat over medium, stirring continuously with a wooden spoon until it comes to a boil and becomes uniform.
  7. Combine and Cook:

    • Use a slotted spoon to transfer the zucchini to the pot with the yogurt mixture. Let them simmer on medium heat for 15 minutes until the zucchini is fully cooked and well combined with the yogurt.
  8. Serve:

    • Pour the zucchini with yogurt into a serving dish and garnish with finely chopped fresh coriander. Serve immediately.
