  • 1 whole chicken, cleaned and skinned, then cut into pieces.
  • 2 medium-sized potatoes, cut into large cubes.
  • 5 garlic cloves.
  • 1 large onion, thinly sliced.
  • A piece of ginger (as desired).
  • 1 kilogram of plain yogurt.
  • 2 cups of rice.
  • Vegetable oil or ghee (as needed).
  • 1 clove.
  • 1 cinnamon stick.
  • 1 cardamom pod.
  • Black pepper (as desired).
  • 1 dried lime (loomi).
  • Saffron (as desired).
  • Ground cumin (as desired).
  • Curry powder (as desired).
  • Dried coriander (as desired).
  • Biryani spices (as desired).

How to Prepare Adeni Zurbian with Chicken:

  1. Sauté the Chicken:
    Heat a suitable amount of oil in a pot over medium heat. Add the chicken pieces and stir them until their color changes on all sides.

  2. Remove the Chicken:
    Take the chicken pieces out of the pot and set them aside.

  3. Cook the Onions and Potatoes:
    In the same pot, sauté the sliced onions, stirring occasionally until softened. Reserve some onions for garnishing later. Return the chicken pieces to the pot and add the potato cubes.

  4. Prepare the Yogurt Mixture:
    In a blender, combine garlic, yogurt, ginger, and a cup of water. Blend the ingredients until smooth.

  5. Add the Yogurt Mixture:
    Pour the yogurt mixture and dried lime into the pot with the chicken and potatoes. Let it simmer over medium heat until the chicken cubes begin to cook through.

  6. Soak the Saffron:
    Soak the saffron in a little hot water.

  7. Cook the Rice:
    Boil the rice with the cinnamon, clove, black pepper, cardamom, curry powder, cumin, biryani spices, and dried coriander.

  8. Combine the Rice and Chicken:
    Add the cooked rice to the chicken mixture and stir in the saffron.

  9. Add the Smoky Flavor:
    Once all the ingredients are cooked, light a small piece of charcoal, place it in the middle of the pot, top it with a little butter, and cover the pot for 10 minutes to infuse a smoky flavor.

  10. Serve:
    Remove the charcoal from the pot, then transfer the contents to a serving dish. Garnish with the fried onion slices you set aside earlier.
