Al-Batresh Al-Hamwi is a famous appetizer in Syria, with several methods of preparation that vary by region. It’s a staple on many tables, especially during Ramadan. This dish is loved by both adults and children due to its easy digestion and its main ingredient, eggplant, which is rich in nutrients and health benefits.

The dish consists of grilled eggplant mixed with "bedouh" (yogurt and tahini sauce) and sautéed ground meat, with additional ingredients as desired. It takes about 30 minutes to prepare the ingredients and 15 minutes to cook. This recipe serves three people.

For the Main Dish:

  • 2 medium-sized eggplants
  • 1 cup ground beef
  • 1 tablespoon corn oil
  • Salt to taste
  • 1 teaspoon black pepper
  • 1 tablespoon tomato paste
  • ¼ cup water

For the "Bedouh" (Yogurt-Tahini Sauce):

  • ½ cup yogurt
  • ½ cup water
  • 3 tablespoons lemon juice
  • 4 tablespoons tahini
  • 1 teaspoon salt
  • 2 cloves garlic, mashed

How to Prepare Al-Batresh Al-Hamwi:

  1. Grill the Eggplants: Wash the eggplants thoroughly and grill them either in the oven or on a grill. You can also fry them, but grilling is preferred to maintain the smoky flavor. Once cooked, peel the eggplants and mash them. Set aside.

  2. Prepare the Bedouh (Yogurt-Tahini Sauce): In a bowl, mix the tahini with water gradually while stirring continuously. Add the yogurt and stir until the mixture is smooth. Then, add the salt, lemon juice, and mashed garlic. Stir well to combine all the ingredients.

  3. Combine Eggplant and Bedouh: Add the mashed eggplant to the yogurt-tahini mixture and stir until well combined.

  4. Cook the Ground Meat: In a pan over medium heat, heat a suitable amount of oil. Add the ground beef and sauté until fully cooked. Season with salt and black pepper. Add the tomato paste and a little water, stirring the mixture until the water evaporates.

  5. Assemble the Dish: In a serving dish, spread the eggplant and bedouh mixture as the base. Then, top it with the seasoned ground meat.

  6. Garnish: Garnish the dish with chopped fresh parsley and two tablespoons of crushed walnuts for extra flavor and texture.
