Beef enchiladas are known for their delicious flavor and high nutritional value. They are also easy to prepare, taking no more than 50 minutes from start to finish.   • 500 grams of ground beef
  • 8 tortillas
  • 1 cup of shredded cheddar cheese

For the Enchilada Sauce:

  • 3 tablespoons of olive oil
  • 3 tablespoons of all-purpose flour
  • 1 tablespoon of chili powder
  • 1 teaspoon of cumin
  • ½ teaspoon of garlic powder
  • ¼ teaspoon of oregano
  • ¼ teaspoon of salt
  • Cinnamon (optional, to taste)
  • 2 tablespoons of tomato paste
  • 2 cups of vegetable broth
  • 1 teaspoon of apple cider vinegar
  • Black pepper (to taste)

How to Prepare Beef Enchiladas:

Prepare the Enchilada Sauce:

  1. In a bowl, combine the flour, cumin, chili powder, oregano, garlic powder, cinnamon (if using), and salt. Mix all the ingredients well until fully combined.

  2. Heat the olive oil in a saucepan over medium heat. Add the dry mixture to the pan, stirring frequently for about 3 minutes.

  3. Add the tomato paste, then gradually pour in the vegetable broth while stirring constantly to prevent lumps.

  4. Let the mixture simmer for about 5 minutes, allowing it to thicken. Remove the sauce from heat, then stir in the black pepper and apple cider vinegar until well combined.

Prepare the Beef Enchiladas:

  1. In a separate pan, cook the ground beef over medium heat until the liquid evaporates and the meat is fully cooked. Add ½ cup of the enchilada sauce to the beef and stir until well combined.

  2. Take a tortilla, spread a thin layer of the enchilada sauce on it, and fill it with ¼ cup of the beef mixture. Roll the tortilla tightly and place it in a baking dish (preferably a Pyrex dish).

  3. Repeat this process with the remaining tortillas and beef mixture.

  4. Once all the tortillas are placed in the dish, pour the remaining enchilada sauce over the top, and sprinkle shredded cheddar cheese evenly across the surface.

  5. Preheat the oven to 200°C (390°F). Once heated, place the baking dish in the oven and bake for about 15 minutes, or until the cheese is melted and bubbly.
