Beef Stroganoff – Recipe for Beef Stroganoff – How to Prepare Beef Stroganoff

Ingredients for Beef Stroganoff:

  • 1 kilogram of beef, preferably tenderloin, sliced
  • 2 tablespoons of corn oil (or butter can be used instead)
  • 2 cloves of garlic, minced
  • 2 large onions, sliced
  • 2 tablespoons of tomato paste
  • 200 grams of mushrooms, sliced
  • 2 cups of beef broth
  • 2 teaspoons of cornstarch
  • ½ cup of sour cream
  • 1 tablespoon of mustard
  • Salt and pepper to taste
  • Optional for serving: pasta, green turmeric, or arugula for garnish

How to Prepare Beef Stroganoff:

Step 1:
Preheat the oven to 180°C (350°F).

Step 2:
Season the beef slices with salt and pepper to taste. Rub them well with a little corn oil.

Step 3:
Fry the beef slices in a skillet in batches, ensuring the meat is seared but not overcooked. Remove the beef and set aside in a small pot.

Step 4:
In the same skillet, add the minced garlic, sliced mushrooms, and onions. Sauté over medium heat until all the ingredients are well cooked and softened.

Step 5:
Add the tomato paste to the skillet and stir it in with the onions, garlic, and mushrooms. Pour in the beef broth, stir the mixture, and let it simmer until it starts to boil.

Step 6:
Pour the mixture over the cooked beef slices, stirring to combine everything well. Cover the pot and let it cook over low heat for 35 to 40 minutes, or until the beef is tender.

Step 7:
In the last 10 minutes of cooking, add the mustard, sour cream, and cornstarch. Stir everything thoroughly and let it simmer until the sauce thickens.

Step 8:
Serve the Beef Stroganoff with pasta or garnish with chopped turmeric or arugula for a fresh touch.
