  • 1 kg camel meat
  • 1 cup of long-grain rice (washed well and soaked in water for 20 minutes)
  • 1 cup of vegetable oil
  • 2 medium-sized tomatoes, finely chopped
  • 2 medium-sized onions, finely chopped
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 2 medium-sized green chilies
  • Water as needed
  • 1 whole dried lime (lumi)
  • 5 whole cloves
  • 6 whole cardamom pods
  • 2 cinnamon sticks
  • 2 bay leaves
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 2 teaspoons ground galangal
  • Salt to taste

How to Prepare Biryani with Camel Meat:

  1. Cook the Rice:

    • Boil water in a suitable pot, add the soaked rice, and cook it until it's about halfway done. Drain the rice and set it aside.
  2. Prepare the Meat and Base:

    • In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and stir until they turn golden.

    • Add the chopped tomatoes, grated ginger, minced garlic, green chilies, dried lime, whole cloves, cardamom pods, cinnamon sticks, bay leaves, ground galangal, black pepper, and salt. Stir everything together until the mixture becomes fragrant.

  3. Cook the Camel Meat:

    • Add the camel meat to the pot and mix well with the spices.

    • Pour in 2 cups of water, cover the pot, and cook for about 60 minutes, or until the camel meat is tender and half the water has evaporated.

  4. Assemble the Biryani:

    • Once the meat is cooked, reduce the heat to low. Add the partially cooked rice on top of the meat mixture.

    • Cover the pot and cook on low heat for 15 minutes, allowing the flavors to combine and the rice to finish cooking.

  5. Serve:

    • Once ready, remove the pot from the heat and transfer the camel biryani to a serving dish.
