How to Prepare Light French Brioche:
In a suitable bowl, mix the white flour, warm milk, and instant yeast. Stir all ingredients well until combined. Knead the dough until you achieve a smooth texture.
Cover the bowl with plastic wrap and let the dough rest for approximately 45 minutes until it rises.
Add the eggs, white flour, sugar, and salt to the dough. Continue kneading for about 15 minutes until a firm dough is formed.
Gradually add the butter while kneading until fully incorporated into the dough. Cover the bowl with plastic wrap and let the dough rise for about 60 minutes until it doubles in size.
Divide the dough into medium-sized equal balls (12 pieces).
Grease a baking tray lightly with butter and place the dough balls inside. Cover them with a cloth and let them rise for 90 minutes until they double in size.
In a small bowl, whisk the egg, water, and salt together. Using a brush, coat the tops of the dough balls with the egg mixture.
Preheat the oven to 190°C. Once the oven is hot, place the tray inside and bake for 30 minutes until the brioche turns golden brown.
Remove the tray from the oven and let the brioche cool slightly before transferring them to a serving plate.
Your light French brioche is now ready to serve. Enjoy this delicious pastry with family or guests, and bon appétit!
