Bukhari rice is one of the favorite dishes among Arabs and is often found on the menu in Arab homes from time to time. This delicious and wholesome dish is perfect for large gatherings, holidays, and special occasions. It's rich in spices and tender meat, making it highly nutritious and beneficial for the body.

  • 2 cups of basmati rice
  • 1 medium onion
  • 500 grams of lamb leg meat
  • 2 ½ cups of meat broth
  • 2 tablespoons of sunflower oil
  • 1 medium carrot
  • 1 teaspoon of black pepper
  • 1 teaspoon of cumin
  • 1 teaspoon of salt
  • 2 cinnamon sticks
  • 8 cardamom pods
  • 1 teaspoon of mixed spices (use your preferred spice mix)
  • 5 cloves
  • 2 bay leaves
  • A small cup of boiled almonds, halved after boiling
  • Toasted pine nuts for garnish
  • Raisins (optional)

How to Prepare Bukhari Rice:

  1. Prepare the Meat: Start by thoroughly washing and cleaning the lamb meat. Place it in a large pot for boiling, adding the onion, cinnamon sticks, cardamom, spices, bay leaves, and cloves. Let the meat simmer over low heat until it is fully cooked.

  2. Prepare the Broth: Once the meat is cooked, set it aside, and use the broth for the rice. Measure out 2 to 3 cups of the broth, as it will add a rich flavor to the rice compared to using plain water.

  3. Cook the Carrots: Cut the carrot into thin strips or grate it, depending on your preference. Sauté the carrots in sunflower oil until they soften slightly.

  4. Prepare the Rice: In a separate pot, add a little oil and the washed basmati rice. Sauté the rice with the previously sautéed carrots. Add 3 cups of the meat broth and 1 cup of warm water, along with the salt, black pepper, cumin, mixed spices, and cinnamon sticks. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer until the rice is fully cooked.

  5. Final Assembly: Once the rice is done, transfer it to a serving dish, placing the cooked lamb on top. Garnish with boiled almonds, toasted pine nuts, and, if desired, raisins for added sweetness.
