  • 2 cups liquid milk
  • 1 egg

For the Filling:
  • 1 medium potato, diced into small cubes
  • 1 medium carrot, peeled and diced into small cubes
  • 2 medium onions, diced into small cubes
  • 2 medium zucchinis, diced into small cubes
  • 3 tablespoons butter
  • 1 cup vegetable oil

Steps to Prepare Cannelloni with Vegetables:

Preparing the Dough:

  1. Mix the batter:

    • In a blender or mixing bowl, combine the flour, milk, egg, black pepper, and salt. Blend or whisk until you have a smooth and consistent batter.
  2. Cook the crepes:

    • Heat a non-stick pan over medium heat. Pour a ladle of the batter into the pan, spreading it thinly across the surface.
    • Cook until the bottom side turns golden, then flip and cook the other side until it also turns golden.
    • Repeat this process until all the batter is used.

Preparing the Filling:

  1. Sauté the vegetables:
    • In a large pan, heat the butter and vegetable oil over medium heat.
    • Add the diced onions and sauté until they become translucent.
    • Add the diced zucchini, potatoes, and carrots. Season with black pepper and salt, stirring occasionally.
    • Cook the vegetables for about 30 minutes, until they are tender. Once done, remove from heat and allow the mixture to cool.

Assembling the Cannelloni:

  1. Stuff the crepes:

    • Place a portion of the vegetable filling in the center of each crepe and roll it into a cannelloni shape.
  2. Arrange in a baking dish:

    • Grease a baking dish with a little oil, then arrange the stuffed cannelloni rolls in the dish.
  3. Add the sauce and cheese:

    • Pour the tomato juice over the cannelloni and sprinkle generously with Parmesan cheese.

Baking:

  1. Bake the cannelloni:
    • Preheat the oven to 180°C (350°F).
    • Place the baking dish in the oven and bake until the cheese melts and turns golden, about 20–25 minutes.
