Cauliflower pies are a delicious pastry dish that can be served at any time. Thanks to the cauliflower in this dish, it offers numerous health benefits, including improving memory, strengthening bones, preventing heart disease, and reducing the risk of cancer. This recipe is enough for 15 people and is quick to prepare, taking about 25 minutes.
Main Ingredients for Cauliflower Pies:
For the Dough:
- 2 ¾ cups of white flour
- 1 tablespoon of instant yeast
- 1 teaspoon of salt
- ½ teaspoon of sugar
- 3 tablespoons of powdered milk
- 3 tablespoons of melted butter
- ½ teaspoon of cumin
- 1 cup of warm water
For the Filling:
- 3 cups of small fried cauliflower florets
- 1 medium green onion, finely chopped
- 1 teaspoon of cumin
- ½ teaspoon of salt
- ½ teaspoon of crushed chili flakes
- ¼ teaspoon of ground black pepper
- ¼ cup of finely chopped parsley
- 1 tablespoon of sumac
For the Glaze:
- 1 large egg
- 1 tablespoon of milk
- ¼ teaspoon of cumin
Preparation Method for Cauliflower Pies:
Preparing the Dough:
In a stand mixer, add 2 ½ cups of flour, yeast, salt, sugar, powdered milk, cumin, and melted butter. Mix on low speed to combine the ingredients. Gradually add the warm water while continuing to mix on medium speed until a soft dough forms. If the dough is too sticky, add the remaining flour.
Place the dough in a deep, greased bowl, cover with plastic wrap, and leave in a warm place until the dough doubles in size.Preparing the Filling:
In a large bowl, mix the fried cauliflower, green onion, cumin, salt, chili flakes, black pepper, parsley, and sumac until well combined.Shaping the Pies:
Once the dough has risen, divide it into 15 pieces. Lightly flour the working surface and roll each piece into a rectangular shape, keeping the dough about ½ cm thick.
Place 2 tablespoons of the filling on one side of the dough rectangle. On the opposite side, make small slits using a sharp knife. Roll the dough over the filling towards the slits until it forms a rolled pie.
Place the pies on a greased baking sheet. Cover them with plastic wrap and let them rest in a warm place for 15 minutes.Preparing the Glaze:
