Cherry Tomato Tart

 

Tart Dough Ingredients:

  • 200 grams of all-purpose flour
  • 150 grams of butter (room temperature), cut into small cubes
  • 1 egg yolk
  • About 30 ml of lukewarm water
  • 150 grams of goat cheese
  • 13 cherry tomatoes, cut in half
  • 1/4 cup of olive oil
  • 1 tablespoon of thyme
  • Salt to taste
  • Black pepper to taste

Preparation of Cherry Tomato and Goat Cheese Tart:

Preparing the tart dough:

  1. In a bowl, mix the salt and flour well.
  2. Add the butter cubes and rub the mixture with your fingers until it resembles crumbs.
  3. Add the egg yolk and mix. Gradually pour in the water while continuing to knead until you get a firm dough.
  4. Place the dough in a bowl, cover it with plastic wrap, and refrigerate for about 60 minutes before using.
  5. Once chilled, divide the dough into small balls.
  6. Press each dough ball into a small tart mold.
  7. Use a fork to poke holes in the dough to prevent it from puffing up during baking.
  8. Place a tablespoon of goat cheese and half a cherry tomato in each tart mold.
  9. Drizzle each tart with a little olive oil, then sprinkle with salt, thyme, and black pepper.

Baking the tart:

  1. Preheat the oven to 200°C. Once heated, place the tart molds in the oven and bake for about 10 minutes until fully cooked.
  2. Remove the tarts from the oven and place them on a serving plate.
