Chicken and Vegetable Soup – How to Prepare Chicken and Vegetable Soup
Chicken and vegetable soup is one of the most nutritious and beneficial types of soups. It's packed with high nutritional value and has a delicious taste. It can be served at lunch alongside other dishes or as a light dinner on its own, as it contains various vegetables that are essential for the human body.
This soup is easy to prepare and only takes 20 minutes to cook, serving eight people.
Main Ingredients for Chicken and Vegetable Soup:
- 2 chicken fillets
- 1 medium-sized onion, sliced
- 2 stalks of celery, finely chopped
- 2 bay leaves
- 2 garlic cloves, sliced
- 1 teaspoon of salt
- 5 whole black peppercorns
- 6 cups of lukewarm water
Vegetable Mixture Ingredients:
- 2 tablespoons of olive oil
- 1 medium-sized carrot, diced
- 1 cup of mushrooms, sliced
- 1 small onion, finely chopped
- 2 tablespoons of white flour
- 1 cup of milk
- 1 cup of cooking cream
- ½ cup of green peas
- 3 medium-sized tomatoes, peeled and finely chopped
- 1 teaspoon of salt
- 2 tablespoons of finely chopped parsley
- 2 tablespoons of freshly squeezed lemon juice
How to Prepare Chicken and Vegetable Soup:
Step 1:
In a medium-sized pot, add the chicken, onion, celery, bay leaves, garlic, salt, peppercorns, and water. Stir the mixture to combine all the ingredients, then let it cook over medium heat until the chicken is fully cooked.
Step 2:
Once the chicken is done, remove it from the broth and set it aside to cool slightly. Then, using a sharp knife, cut the chicken into small cubes.
Step 3:
In a deep pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and mushrooms, stirring continuously with a wooden spoon until the onions turn a light golden color. Then, add the flour and stir for about 15 seconds.
Step 4:
Next, add the tomatoes and peas, stirring them together. Afterward, add the chopped chicken, chicken broth, and milk, and bring the mixture to a boil over medium heat.
Step 5:
Once the soup starts to boil, reduce the heat and let it simmer for 15 minutes to allow all the ingredients to cook thoroughly.
Step 6:
Finally, add the cooking cream, stirring well, and let the soup simmer for another 2 minutes on low heat. Pour the soup into serving bowls and garnish with chopped parsley and a drizzle of lemon juice.
