  • 2 medium-sized chicken breasts, skinless and boneless, cut into small cubes
  • 1 medium-sized onion, finely chopped
  • Vegetable oil (as needed)
  • 1 can of corn
  • 1 bag of frozen peas
  • 1 bag of frozen diced carrots
  • 6 sheets of puff pastry dough
  • Mozzarella cheese (as needed)

For the Sauce:

  • 1 can of cream
  • 2 tablespoons of spreadable cheese
  • 1/2 cup of water

How to Prepare Chicken Cups:

  1. Prepare the Filling:

    • Heat some vegetable oil in a pot over medium heat, then add the chopped onions and sauté until they soften.
    • Add the small chicken cubes and stir until they are well combined.
    • Add the frozen peas, corn, and diced carrots, stirring all ingredients together.
    • Cook the mixture while stirring occasionally until all ingredients are fully cooked. Remove the pot from the heat and allow the mixture to cool slightly.
  2. Prepare the Puff Pastry Cups:

    • Shape the puff pastry sheets into individual cupcake molds.
    • Place two tablespoons of the chicken mixture into each puff pastry cup.
  3. Prepare the Sauce:

    • In a bowl, combine the spreadable cheese, cream, and water. Stir until the sauce ingredients are well blended.
    • Add two tablespoons of the sauce over the chicken mixture in each cup, then sprinkle shredded mozzarella cheese on top.
  4. Baking:

    • Preheat the oven to 200°C (392°F). Once preheated, place the cupcake molds in the oven and bake for approximately 15 minutes, or until the puff pastry is golden and the cheese is melted.
  5. Serve:

    • Remove the chicken cups from the oven and place them on a serving dish.
