For the Chicken Gizzards:

  • 1 kilogram of chicken gizzards.
  • ½ teaspoon of black pepper.
  • ½ teaspoon of cumin.
  • ½ teaspoon of ginger.
  • 1 teaspoon of salt.

For Boiling the Gizzards:

  • Cardamom pods (as needed).
  • 1 cinnamon stick (as needed).
  • 1 large onion.
  • Whole cloves (as needed).

For the Rice:

  • Bay leaves (to taste).
  • 25 cardamom pods.
  • 1 cinnamon stick.
  • 1 piece of galangal (or dried ginger).
  • 2 chicken bouillon cubes.
  • ¼ cup of water mixed with yellow and red saffron (to color the rice).
  • 2 cups of rice.
  • 2 cups of water.
  • 2 tablespoons of ghee.
  • Butter (as needed).

Preparation Method:

Preparing the Gizzards:

  1. Clean the Gizzards:
    Thoroughly clean the gizzards by soaking them in water with salt and vinegar for 10 minutes. Then drain them.

  2. Cook the Gizzards in Pressure Cooker:
    In a pressure cooker, add cumin, black pepper, ginger, chopped onion, salt, cloves, cinnamon stick, 10 cardamom pods, bay leaves, galangal, 1 tablespoon of ghee, and a little oil. Sauté the ingredients over medium heat for 5 minutes.

  3. Add the Gizzards:
    Add the cleaned gizzards and sauté until their color changes. Then, pour enough water to cover the gizzards and close the pressure cooker. Cook for 45 minutes until the gizzards are tender.

  4. Roast the Gizzards:
    Once cooked, place the gizzards on a baking tray, brush them with saffron water, and roast them in a preheated oven until they turn golden.

Preparing the Rice:

  1. Prepare the Broth:
    Blend ¼ cup of water, the chicken bouillon cubes, and 15 cardamom pods in a blender until smooth.

  2. Soak and Wash the Rice:
    Soak the rice in cold water for 45 minutes. Then rinse and drain.

  3. Cook the Rice:
    In a large pot, melt 1 tablespoon of ghee with a little vegetable oil over medium heat. Add the bay leaves, cloves, black pepper, galangal, and cinnamon stick, and sauté for 2 minutes.

  4. Add the Rice:
    Add the soaked and drained rice to the pot and stir for 5 minutes. Then, pour in the blended broth mixture and stir for another 2 minutes.

  5. Add Water and Saffron:
    Pour 2 cups of water into the pot and bring it to a boil. Increase the heat to high for 3 minutes, then reduce the heat.

  6. Color the Rice:
    About 10 minutes before the rice is fully cooked, pour in the saffron water and stir the rice to give it a golden color.

  7. Serve:
    Place the rice on a serving plate alongside the roasted gizzards.
