Ingredients for Chicken Quesadilla:

Chicken Quesadilla

 

  • 2 chicken breasts, skinless and boneless, cut into cubes.
  • ½ teaspoon of cumin.
  • ½ teaspoon of coriander.
  • ½ teaspoon of ground cinnamon.
  • ½ teaspoon of black pepper.
  • Salt to taste.
  • 1 small onion, finely chopped.
  • 1 can of corn.
  • 3 tortillas.
  • 1 tablespoon of apple cider vinegar.
  • ½ tablespoon of chili sauce (optional).
  • 1 clove of minced garlic.
  • 2 tablespoons of sour cream.
  • 1 tablespoon of tomato sauce.
  • 1 tablespoon of corn oil.
  • ½ red bell pepper, diced.
  • 1 cup of shredded cheddar cheese.

Preparation of Chicken Quesadilla:

  1. In a bowl, mix the chicken cubes with tomato sauce, vinegar, cumin, coriander, cinnamon, black pepper, and salt. Stir until well combined.

  2. Cover the bowl and refrigerate for 30 minutes.

  3. Heat the oil in a pan over medium heat. Add the chopped onion and sauté until golden brown. Add the marinated chicken cubes and cook until the liquid evaporates.

  4. Add the minced garlic and diced red bell pepper to the pan and stir until the bell pepper softens. Then, add the corn and stir occasionally until all ingredients are cooked. Remove the pan from the heat.

  5. Place a tortilla in a separate pan over medium heat and spread 1 tablespoon of sour cream on it. Add a portion of the chicken mixture on top and sprinkle some shredded cheddar cheese over it.

  6. Place another tortilla on top and press it down gently until the bottom tortilla turns golden. Flip the quesadilla carefully, pressing down again slightly, and spread 1 tablespoon of sour cream on top. Add more chicken mixture and cheese, then cover with a third tortilla.

  7. Once the bottom tortilla is golden, carefully flip the quesadilla one more time to cook the final layer.
