Main Ingredients for Preparing Chicken Soup with Vermicelli:

Chicken Soup with Vermicelli

  • 1 kg of chicken
  • 10 whole cardamom pods
  • 10 sprigs of parsley
  • 10 sprigs of fresh coriander
  • 10 sprigs of dill
  • 1 green onion stalk
  • 1 large carrot, thinly sliced
  • 3 bay leaves
  • 1 tablespoon of salt
  • ¼ teaspoon of ground black pepper

Vermicelli Mixture Ingredients:

  • 1 tablespoon of cornstarch
  • ¼ tablespoon of water
  • 1 cup of vermicelli
  • ¼ cup of finely chopped parsley
  • 2 tablespoons of lemon juice

How to Prepare Chicken Soup with Vermicelli:

  1. Boil the Chicken: In a large pot, place the chicken along with the cardamom, parsley, coriander, green onion, carrot slices, bay leaves, salt, and black pepper. Add enough water to fully cover the chicken.

  2. Cook the Chicken: Place the pot over medium heat and cook the chicken until fully cooked. Once done, remove the chicken from the broth and set it aside. Strain the broth using a fine mesh strainer to remove the herbs and vegetables, keeping only the clear broth. Return the strained broth to the pot and bring it back to medium heat.

  3. Prepare the Vermicelli: In a wide, thick-bottomed pan, toast the vermicelli over medium heat until it turns golden brown, stirring constantly. Transfer the toasted vermicelli to the pot of broth and let it simmer for 10 minutes.

  4. Cut the Chicken: While the vermicelli cooks, shred or cut the chicken into small pieces. Add the chicken back to the pot and let it simmer with the vermicelli for another 7 minutes until everything is well combined and the vermicelli is fully cooked.

  5. Thicken the Soup: In a small bowl, dissolve the cornstarch in water, stirring until fully combined. Slowly add the cornstarch mixture to the soup while stirring gently with a whisk until the broth thickens slightly.

  6. Finish the Soup: Add the lemon juice and chopped parsley to the soup. Ladle the soup into small serving bowls and serve it hot.

Your chicken soup with vermicelli is now ready to be enjoyed! This comforting and nutritious soup is perfect for a cold day or a cozy family dinner. Bon appétit!
