How to Prepare Chicken Wings:
Prepare the chicken: Wash the chicken wings thoroughly and place them in a wide, deep dish. Add the freshly squeezed lemon juice. In a separate medium-sized bowl, combine the black pepper, dried coriander, ginger, onion powder, turmeric, paprika, red pepper flakes, and salt. Mix well.
Season the chicken: Add half of the spice mix to the chicken wings and toss them to ensure the wings are well coated with the spices. Set aside to marinate.
Prepare the coating: In a wide dish, combine the flour, cornstarch, and baking powder. Add the remaining spice mix to the flour mixture and stir well.
Fry the chicken: Heat a generous amount of sunflower oil in a wide, heavy-bottomed frying pan over medium heat until it reaches the right temperature. Meanwhile, dredge the chicken wings in the flour and spice mixture, making sure they are coated evenly on all sides. Once the oil is hot, fry the chicken wings, turning them frequently until they are golden brown and crispy on all sides. Remove them from the oil and place them on parchment paper to absorb any excess oil.
Prepare the sauce: In a medium-sized pan, melt the butter over medium heat. Once melted, add the garlic and ginger, cooking until the garlic turns golden. Add the ketchup, brown sugar, hot sauce, soy sauce, and oyster sauce. Stir the sauce continuously for about 3 minutes until it thickens and becomes well combined.
Coat the chicken: Add the fried chicken wings to the sauce and toss them until they are well coated with the sauce.
Garnish and serve: Transfer the wings to a serving dish. Sprinkle the finely chopped green onions and a handful of sesame seeds on top. Serve the wings hot.
Enjoy your flavorful and juicy chicken wings, perfect for a hearty meal or gathering!
