Coconut cupcakes are one of the most delicious desserts that can be served during family gatherings.   • 150 grams of melted butter
  • 1 cup of sugar
  • 2 large eggs
  • 1 teaspoon of liquid vanilla (or powdered vanilla if unavailable)
  • 1½ cups of white flour
  • ½ teaspoon of baking powder
  • ¼ teaspoon of salt
  • ½ cup of cold milk
  • 6 pieces of cream cheese
  • 1 cup of powdered sugar
  • 2 cups of shredded coconut

How to Prepare Coconut Cupcakes:

  1. Prepare the cupcake molds: Line the cupcake molds in a baking tray and set aside. To prepare the cake batter, place the melted butter and sugar in an electric mixer and blend on medium speed for 2 minutes until smooth.

  2. Add the eggs and vanilla: Add the eggs and vanilla to the mixer and continue blending on medium speed for a few more seconds until all the ingredients are well combined.

  3. Mix the dry ingredients: In a large bowl, sift the flour, salt, and baking powder, then mix them well. Gradually add one-fourth of the flour mixture to the mixer, followed by one-fourth of the milk, continuing to alternate between flour and milk until all the ingredients are combined into a smooth batter.

  4. Fill the cupcake molds: Pour the cupcake batter into the molds, filling only one-third of each mold.

  5. Bake the cupcakes: Preheat the oven to 180°C (350°F). Place the baking tray on the middle rack of the oven and bake for 15-20 minutes until the cupcakes turn light golden.

  6. Let the cupcakes cool: Once baked, remove the tray from the oven and place it on a wire rack to allow the cupcakes to cool slightly.

  7. Prepare the cream topping: In the mixer, combine the cream cheese, powdered sugar, and ¾ cup of shredded coconut. Mix on medium speed until the mixture becomes smooth and creamy.

  8. Decorate the cupcakes: Spread the cream topping over the cooled cupcakes, then sprinkle a moderate amount of shredded coconut on top.
