  • 1 piece of Tri-tip (Treibianco) beef.
  • 4 tablespoons of white sugar.
  • 1 1/2 cups of vinegar.
  • Salt to taste.
  • 1 teaspoon of black pepper.
  • 1 tablespoon of minced garlic.
  • Oil (as needed).

How to Prepare Cold Meat:

  1. Wash the meat thoroughly with water and remove any excess fat.

  2. Poke several close holes in the meat, then set it aside.

  3. In a suitable bowl, mix the minced garlic, salt, black pepper, and 1 teaspoon of vinegar until the ingredients are well combined.

  4. Stuff the holes in the meat with the garlic mixture.

  5. Tie the meat piece with a thick thread to keep its shape during cooking.

  6. In another bowl, mix 2 tablespoons of white sugar with 3/4 cup of vinegar until combined.

  7. Rub the meat well with salt, then place it in a large plastic bag.

  8. Pour the sugar and vinegar mixture into the bag, seal it tightly, and place the bag in the refrigerator overnight.

  9. The next day, remove the meat from the bag and drain the liquids well.

  10. Heat 4 tablespoons of oil in a suitable pot over medium heat, then add the meat and turn it occasionally until it changes color on all sides.

  11. In another bowl, mix the remaining sugar, vinegar, 1 cup of hot drinking water, and a little salt until well combined.

  12. Pour the mixture into the pot with the meat and bring it to a boil.

  13. Lower the heat to low, checking the pot every 15 minutes. If the liquids reduce, add 1/4 cup of water.

  14. Once the meat is fully cooked, remove it from the liquid and set it aside to cool completely.

  15. Remove the thread from the meat and slice it into thin slices. Place the slices on a serving plate and pour the remaining liquid over them.
