How to Prepare Curry Potato Pies:
Prepare the dough: In a mixer, add the flour, butter, salt, and cumin. Mix on medium speed for a few minutes, then gradually add the cold water while mixing until a soft dough forms. Stop adding water once the dough is smooth. Shape the dough into a ball, place it in a large bowl, cover it with plastic wrap, and let it rest in a warm place for 60 minutes until it doubles in size.
Prepare the filling: Peel and wash the potatoes thoroughly, then cut them into medium-sized cubes. Place them in a pot, cover with water, and boil for a few minutes until they are slightly soft but not fully cooked. Drain the potatoes and set them aside to cool completely.
